5 Minute Vegan Caesar Salad Dressing
While I was cleaning out the pantry and the fridge today, I came across a bunch of half empty containers and bags. One of those containers was once full of cashews. Time for a grocery store trip!
I also had about a tablespoon’s worth of capers in the fridge.
Um, Caesar dressing! Duh!
Not only is it delicious, but it took 5 minutes to throw together and you probably already have everything you need.
Ingredients
1 C raw cashews
1 T capers + splash of juice
1 t salt
1 T Dijon mustard
1 C water
1 T apple cider vinegar (or lemon)
Directions
This is the 5 minute part…
I’m a small saucepan, bring cashews to a quick boil.
Drain and add them, and the rest of the ingredients, to a blender.
Blend until smooth.
Pour a generous amount over a bed of greens and toss until coated. For a little crunch, I added wants pieces. You could also add vegan Parmesan!
