Bean and Avocado Salad
The easiest, healthiest dinner of all! Salads are the greatest dish when I don’t know what to make or when I don’t have much left in my fridge except odds and ends. Here’s one that’s my tried and true!
Bean and Avocado Salad
1 can chick peas, drained and rinsed
1 can kidney beans, drained and rinsed
Half a package of any kind of cabbage mix
1 ripe avocado
1 roasted red pepper, chopped into small pieces
1 small onion, diced
4 T apple cider vinegar
dash of salt and pepper, or to taste
1 t Old Bay seasoning, or celery salt if you don’t have Old Bay
Drizzle of olive oil
Mix all the salad ingredients in a large bowl. Drizzle oil and vinegar and sprinkle Old Bay and salt and pepper on top Mix it up once more until the dressing has coated everything well. You can add more vinegar and oil if need be, depending on how much salad you want to make.
