Brussel Sprout and Artichoke Salads
My summer salad dinner continues with this new one I created. Since it’s still way too hot to be cooking, I’m eating mostly raw. There are a few items, like artichokes that are pre cooked, but the majority is raw.
Brussel Sprout and Artichoke Salad
2 C shredded brussel sprouts
1/2 C halved cherry tomatoes
3 Large artichoke hearts, separated
1 Small shallot, thinly sliced
Handful of sunflower seeds
1 C kidney beans, drained and rinsed
A few dashes of Kelp, opt.
Dijon Thyme Salad Dressing
1 T Dijon mustard, I used Annie’s
2 T nutritional yeast
1 T thyme
1/2 Water
Mix well with a fork until fully blended.
