Cheese Less Queso
Yesterday was national chip and dip day and I figured the best way to enjoy it had to involve queso.
There’s no fake cheese involved!!
So easy to make and you probably already have the ingredients!
Vegan Queso
1 Jar salsa, as hot as you can handle
1 C raw cashews
1/2 C nutritional yeast
1 Bell pepper
1 Medium onion
Salt, to taste
Dice the onion into small pieces and caramelize over medium heat with a little olive oil.
Toss it all in a blender except the onion. Pour it into an oven safe dish. Stir in the onion. I used my cast iron skillet to cook the onion then poured the Queso right in.
Bake for 10 to 15 minutes at 450. It should have a nice golden brown top.
Serve it up with some tortilla chips and you’re ready to go!
