GF Sweet Potato Banana Muffins

Best muffin for those sweet cravings of mine! Gluten free, protein, naturally sweet and full of peanut buttery goodness!

GF Sweet Potato Banana Muffins

1 cooked sweet potato, skinned
1 ripe banana
1/2 C peanut butter of choice
2 egg replacers (I used Neategg)
Cinnamon

Heat oven to 375. Prepare egg replacer. Neategg is 2 tbs powder plus 4 tbs water for this recipe. In large bowl, mix everything! Pour into muffins cups (or a greased muffin pan if you’re trying to reduce waste like I am) and bake for 18 to 20 minutes.

Super moist, super yummy! Great for mid morning snacks or after run treats. Try adding extras too!
