Happy Labor Day Weekend!
Phil and I took a trip up to the north country in the Adirondacks. If you’ve never been, please go.
Hiking, boating, relaxing, swimming, camping… the great outdoors! It’s the most wonderful vacation.
Since my parents live up there we got a chance to visit with them and enjoy a little country also. We took a hike up Azure Mountain and had a little picnic while overlooking what seems like the whole world! It’s incredible to say the least.
My dad made a fire just about every night so naturally I had to make s’mores!
I found a dark chocolate with almonds and cherries that I used along with the vegan marshmallows and graham crackers that I got at a local health food store.
And in case you were wondering, yes! S’mores and pumpkin ales do go perfectly together <3
Dinners were awesome! Nothin but local veggies from the family farms up there. There was a lot of grilling this weekend. One night we had veggies kabobs with an agave soy marinade and a side of grilled acorn squash that I dipped in beer than dipped in brown sugar and sage. YUMMY!
Saturday night I tried out something I’ve always been wanting to try. Grilled pizza. Yup. Pretty much as simple as it sounds and just as delicious as you think. Homemade dough, grilled veggies, BBQ and vegan mozzarella.
Our last night, I marinated some sprouted tofu, onion and strawberries in balsamic and Dijon mustard. I baked it then broiled it and served it up with some pasta covered in grape seed oil, sage, ginger, white pepper and sea salt.
We definitely took advantage of what the land had to offer this weekend. It was just perfect.
