Vegan Maple Dijon Beet Salad
Another simple salad with an AMAZING dressing! The colors alone make you want to eat this beautiful bowl of veggies.
Beet Salad
1 Bag rainbow slaw
2 Small beets, diced
1 Can chick peas, drained and rinsed
1/2 C saltled pumpkin seeds
Maple Dijon Dressing
2 t Dijon mustard of choice (I used Annie’s)
2 T maple syrup
A couple dashes of smoked paprika
2-3 T water, depending on how thick you want the dressing
Mix well and pour over salad mix.
Not in the mood for a salad? Add the beet mix to warm taco shells!
