Peppermint Hot Chocolate Cookies
My mama bought be a bag of Dandie’s vegan peppermint marshmallows and there are way too many in the bag for me to eat. So, cookies!
Cookies with marshmallows and chocolate chunks that taste like you’re eating a peppermint hot chocolate, yes please!
I’m giving credit to a lovely vegan friend I know from Instagram, that said she uses marshmallows in her cookies.
I took one of my cookie recipes and modified it just a bit and 💥!
Ingredients
1/4 C vegan brown sugar
1 C vegan granulated sugar
2 t vanilla
1 t baking soda
1 t salt
2 T cornstarch
2 1/2 C all purpose flour
1 C chocolate chunks
1 C vegan peppermint marshmallows
1 C veggie oil
2 Vegan Eggs (2 T Follow Your Heart vegan egg powder + 1/4 cup water)
Directions
Pre heat oven to 375′
In a large mixing bowl, cream the veggie oil and sugars. Add in vanilla, vegan egg, salt, soda and starch. Beat until blended with sugar mixture.
Add flour a half cup at a time, mixing as you go until you have a light, smooth cookie dough mixture. You know, the consistency you cant wait to eat with a spoon?!
Lastly, mix in the chocolate chips and marshmallows.
Scoop about a tablespoon into your hand and roll into a ball. Place on a parchment lined baking sheet.
Bake about 13 to 16 minutes. Cookies should be a nice, golden brown on top and the marshmallows will be melted and spread throughout the cookie.
If you make a ball bigger than a tablespoon, then leave it to bake for about 16 minutes.
