Vegan Pita Pizza with Cashew Pesto
Need a super easy, tasty dinner idea? Here’s my pita pizza with cashew pesto recipe!
Cashew Pesto
1 C unsalted cashews
1/2 container cherry tomatoes, halved
1 large handful fresh basil
Black olives, sliced
A couple drizzles olive oil
Dash of salt
This ones easy… Throw all of the ingredients in the food processor and blend.
Pizza Topping
1 large pear of choice, sliced very thin
Handful arugula
BBQ sauce of choice
Red onion, sliced thinly
1 large red pepper, sliced thin
1/2 container cherry tomatoes
Salt and pepper, to taste
Olive oil
Everything seasoning or Old Bay Seasoning (opt)
In a large skillet, saute red pepper and onion with just a little oil. In a separate bowl, mix arugula, halved cherry tomatoes, olive oil and seasoning of choice.

To assemble the pizza: spread the pesto over your pita bread. Add sliced pears and drizzle on BBQ sauce. Add sauteed onions and peppers and top off with arugula salad.
