Roasted Broccoli With Buffalo Sauce

I haven’t had a working oven since Thanksgiving! So, to celebrate my first week of having the ability to bake things, I’ve been making everything in the oven. Last night, roasted broccoli with onions and homemade buffalo sauce served with cheezy rice.

Buffalo Sauce

2 T vegan butter
2/3 C hot sauce of your choice
2 T apple cider vinegar
Dash celery salt
Dash chili powder
Dash garlic powder
1 1/2 T vegan Worcester Sauce

Melt butter on low heat in a sauce pan. Add the rest of the ingredients and let boil then immediately turn burner down to low. Cover and let it simmer for about 19 minutes.

Bake broccoli and cut onion on 400′ for about 45 minutes, turning mid way. Pour over sauce and continue to bake for another 15 minutes.

Cheezy Rice

1 C brown rice
2 C water
2 T vegan butter
1/2 C nutritional yeast
Salt and pepper, to taste

Bring rice and water to boil then cover and let simmer for 45 minutes occasionally stirring. Once cooked, add yeast, butter, salt and pepper. Mix well.

Serve broccoli over rice and drizzle a little more buffalo sauce for an extra kick!
