Roasted Veggie Hummus Bowl

I get home at 5:30, start dinner, clean up the house, make breakfasts and lunches then I pick up my husband from work, we work out and before I know it it’s 9:30/10! Where does the day go?! Like I said, I need fast dinners. Real food, no pre packaged, no crap. Clean eating all the way!
Veggies – whatever’s in the fridge
Hummus – homemade or store bought
Kale
Rice
Avocado
Onion
Aminos
Salt and pepper to taste
Roast the veggies dry at 450 for 40 minutes. I threw a quick hummus together (see recipe below) and topped off some kale (or rice if you want a rice bowl) with the veggies, aminos, s&p to taste, and of course nutritional yeast.
Hummus
Chickpeas
2 cloves garlic
1 heaping tbs tahini
1/2 cup water
Salt, to taste
Coarse pepper, to taste
1 tbs tomato paste (adds a nice sweetness)
Good dash or acv or lemon
Process everything until smooth and that’s it!
