Vegan Smoked Paprika and Broccoli Salad
Happy summer! Finally, it’s official and it’s time to start going on picnics and having cookouts.
Nothing like a good salad to compliment some vegan hotdogs and burgers. So, here’s my first of many summer salads.
Smoked paprika and broccoli
1 Large head of broccoli, chopped into bite size pieces
1 Can kidney beans, drained and rinsed
2 Stalks green onion
1 Small onion, diced
Handful cherry tomatoes, halved
1 T capers
2 t mayo of choice
1 T smoked paprika
1 t pepper
Salt, to taste
1 t garlic powder
1 T flax seeds
3 T pumpkin seeds
3 T nutritional yeast
Yet, another easy recipe! Just mix everything together and serve. It’s good at room temperature and chilled.
