Spicy Bean & Corn Salad
What’s one to do when there isn’t much food left in the house? Invade the pantry!
Easy Tuesday night dinner: Spicy Bean and Corn Salad
Salad
1 C kidney beans, drained and rinsed
1 C cannelloni beans, drained and rinsed
1/2 pecorino peppers
1/2 Red onion, diced
1 C Daiya Cheddar Cheese
2 Small tomatoes, diced
1 C corn
1 t coarse sea salt, or to taste
1 T cardamom
A few very good dashes of Tabasco, or hot sauce of your choice
2 T apple cider vinegar
2 t steak or chicken seasoning
Place drained and rinsed corn and beans into a large bowl. Add in onion and pepper and mix well. Sprinkle in the cheese, spices and then add vinegar and hot sauce. Stir until everything is coated evenly.
Goes great with tortilla chips or as a side dish to almost anything.
My husband, of course, loved it in taco shells :)
