Spinach and Artichoke Dip
It’s been years since I’ve had spinach and artichoke dip. Finally, a vegan friendly version that has the same creaminess and immense flavor without the cheese! This was a hit at our Super Bowl 2015 party! Super easy to make and something I’ll definitely be making for all my parties.
Spinach and Artichoke Dip
2 C cashews
2 C frozen spinach
1 Can artichokes
Juice of one lemon
2 cloves garlic
1 T whole grain mustard
1 C almond milk + 1/2 C almond milk
1 t salt
A few dashes of pepper
In a blended, combine cashews, mustard, 1 cup almond milk, lemon juice, garlic and s&p and blend until smooth. Add in spinach and artichokes and a little of the extra half cup almond milk at a time. Pulse these ingredients together. You’ll need to stop and mix it up a bit if you have an older blender like me. You can make it as smooth as you’d like but I left little chunks of articles in mine.
Next, place in am oven safe dish and bake at 450′ for 20 minutes.
I served mine with bread and pita chips.
