Sun Dried Tomato Tofu Scramble

Breakfast isn’t always boring oats and fruit and granola and all the things that non vegans think we ONLY eat.

Breakfast, like any other meal, is a culinary adventure! It’s exciting and challenging to come up with good food, even if you’re not vegan.

I’ve been making tofu scramble for years and I think it’s better each time I make it!

Here’s just ONE of my delicious recipes to please anyone for breakfast.

Ingredients

1 Block extra firm tofu
1 Medium onion, diced
Small handful of sun dried tomatoes, cut into small pieces
1 to 2 t soy sauce
3 T nutritional yeast
3 to 4 T veggie broth (Secret ingredient!!)
1/4 C non dairy cheddar shreds
2 t onion powder
2 t garlic powder
1 t paprika
1 t salt
Dash of pepper
1 T olive oil

Directions

About 30 minutes before cooking, wrap the tofu in a paper towel. Then wrap it in a dish cloth. Find something heavy, like a cast iron skillet, and place on top of the tofu. Let the tofu sit like this for a half hour.

This will dry it out and make for a much better texture.

Heat your skillet and add the oil. When hot, sauté onions. Crumble the tofu into the skillet.

It’s up to you on the size of the tofu. You could even cut it into small cubes or place the entire block into the skillet and crumble it as you go. The photos below show you this method. One of my favorite ways, because it really crisps the tofu. And, you don’t get bits of tofu all over your hands.

After the tofu has had a chance to start browning, turn the heat down to low and add in your soy sauce, veggie broth, veggies and spices. Let that cook together, while stirring and scraping the bottom of the pan, for about 5 minutes.

The veggie broth makes it creamy and more like the texture of a scrambled egg.

**If you let the tofu sit for a bit and come back for seconds, just add another splash or two of broth to reheat the scramble.

Add the cheese in last and mix until it’s all melted and incorporated into the tofu mixture.

That’s all it is. Takes about 30 minutes to dry and less than 30 minutes to cook.
